I buy bananas just to let them rot on my counter.

True story.

Behold:


Rotten bananas.

Perfect for banana muffins, my new true food love!

Banana Muffins
3 bananas
1/3 cup butter, melted
1 egg
1 1/2 cup flour
3/4 cup sugar
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Bake at 350 for 20 minutes. Makes one dozen muffins.

*Add roughly chopped nuts and/or semi-sweet chocolate chips and it's a whole 'nother level of heaven.
